“Baccalà” in Italian, air-dried cod has been a culinary cornerstone in Mediterranean cuisine for centuries. Its unique preservation method gives it a distinctive texture and flavor, making it a versatile ingredient in various dishes.
THE WHITE COD PATE
Ruling Istria for centuries, the Venetian Republic left its mark on its traditional cuisine. The most common dish is “bakalar na bijelo” (known as baccalà mantecato in Italian), paté made from stockfish (air-dried cod), which was being imported to Venice centuries ago.
Cooking class Istria
This rich and creamy dish, the centerpiece of this class, is usually served as an appetizer, but Istrians also prepare it with posutice, a type of diamond-shaped local pasta – which is what we make for this class. Traditionally eaten on Christmas Eve, this dish was normally preceded by maneštra, a thick beans soup made, in this case, chickpeas.
THE RED COD STEW
To complement the stockfish galore, we prepare bakalar na crveno- RED COD STEW, a more Dalmatian-style stew made with fish and potatoes.
