Dating back to ancient times, čripnja/peka is a baking bell made for cooking on an open fire. Čripnja, the Istrian variant, is made of clay, whereas peak, found in Dalmatia, is made from cast iron. Food prepared in them turns out neither cooked nor baked, but somewhere in between, crispy on the outside, yet tender on the inside. Veal, lamb, or octopus usually find their place in a čripnja/peka, always paired with potatoes and vegetables that soak up the juices.

Apart from preparing the peka, you will start by preparing an additional dish. Usually, it is pasta, but it can be something else, depending on your preferences and what’s available on the green market.
